Amaro Rosina

Enjoy a few of these seasonal cocktails with a bottle of our aperitivo-style Amaro Rosina. These simple recipes are easy to build and a great way to showcase Rosina for family and friends any time of the year. All you need is a bottle of our booze and the easy-to-make syrups and juices listed below. We’ll continue to add to this list as our seasonal cocktail menu changes. Cheers!

Plum negroni

Another riff on the classic Negroni with our Gin and Aperitivo style Amaro Rosina. In place of the traditional sweet vermouth, we sub in a reduced plum syrup for a rich fruity sweetness, complementing the drying bitterness of the Rosina. It's a classic for a reason!

Ingredients:

  • 1 oz Highside Gin

  • 1 oz Highside Amaro Rosina

  • .5 oz Plum Syrup

  • Garnish: Orange Peel

Mix all ingredients, add ice, and stir for 10 seconds, or until chilled. Strain into a rocks glass and garnish with a thick slice of orange peel.

Plum Syrup: Bring 1 cup of plum juice to a boil (uncovered) and let reduce to half the original volume - a truly SIMPLE syrup!

Rosina highball

A simple fizzy cocktail highlighting the fresh citrus and drying bitterness of the Amaro Rosina. Although more traditionally a warm-weather cocktail, this spritz can be enjoyed year round!

Ingredients:

  • 1.5 oz Highside Amaro Rosina

  • 1 oz Grapefruit Juice

  • 2 dashes Angostora Bitters

  • Soda Water

  • Garnish: Fresh Sage Leaf (or other fresh herb)

Mix all ingredients (less soda) in a cocktail shaker, add ice, and shake vigorously for 5-10 seconds, or until chilled. Strain and pour contents over fresh ice in a Collins glass.. Top with soda. Garnish with fresh herbs.

Pre-Tea in Pink

A timeless classic, just like the movie! Bright, fizzy, bitter, and a hint of sweet - perfect for warm-weather sipping.

Ingredients:

  • 1.25 oz Highside Amaro Rosina

  • .5 oz Hibiscus Tea Agave Syrup

  • .25 oz Lime Juice

  • Soda Water

  • Garnish: Lime twist

Mix all ingredients (less soda) in a cocktail shaker, add ice, and shake vigorously for 5-10 seconds, or until chilled. Pour entire contents of shaker in a rocks glass.. Top with soda. Garnish with lime twist.

Hibiscus Tea Agave Syrup: Bring 1 cup of water and 1 cup of agave syrup to a boil to incorporate fully. Turn off heat and add 3 bags of hibiscus tea to steep for 20mins. Strain and cool before using.

Rosina spritz

It’s always spritz season, baby! One of the most refreshing and bubbly cocktails that’s perfect for a warm summer day. This spritz has a dry, crisp finish with the combination of our bitter aperitivo and a dry sparkling wine.

Ingredients:

  • 2 oz Prosecco or Sparkling Wine

  • 2 oz Highside Amaro Rosina

  • 1 oz Soda Water

  • 1/2 oz Orange Juice (Optional)

  • Garnish: Orange wheel

Build this drink directly in a large wine glass. Fill the glass with ice, then add each of the ingredients listed. Give this a gentle stir, then place your orange wheel into the side of the glass. If you’re looking for a more traditional, sweeter style of spritz, consider adding the 1/2 oz of Orange Juice, or alternatively 1/4 oz of simple syrup. Cheers!

rhubarb highball

A seasonal Rhubarb shrub lends a nice acidity to this refreshing summertime cocktail. And it doesn’t look so bad either!

Ingredients:

  • 1.5 oz Highside Amaro Rosina

  • .75 oz Rhubarb Shrub (see below)

  • Soda Water

  • Garnish: Fresh Sage Leaf (or other fresh herb)

Mix all ingredients (less soda) in a cocktail shaker, add ice, and shake vigorously for 5-10 seconds, or until chilled. Strain and pour contents over fresh ice in a Collins glass.. Top with soda. Garnish with fresh herbs.

Rhubarb Shrub: Chop 2lbs of fresh rhubarb (yes, that’s a LOT!) into 1/4” pieces and add to a medium sauce pan with 1 cup of white wine vinegar and 1 cup of sugar. Bring to a boil, then reduce to a simmer for 10-15minutes until the Rhubarb has broken down. Remove from heat and pour mixture through a cheesecloth-lined strainer. Once liquid has strained, let chill before serving and store in the refrigerator.

Salted plum collins

Salt in a cocktail? Yes, please! The salt and fresh plum juice are a perfect pairing for the drying bitter finish of our Amaro Rosina. Complex and refreshing!

Ingredients:

  • 1.75 oz Highside Amaro Rosina

  • 1 oz Fresh Plum Juice

  • .5 oz Fresh Lemon Juice

  • 1 large dropper of saline solution (see below)

  • Soda Water

  • Garnish: Maraschino and Salted Rim

Mix all ingredients (less soda) in a cocktail shaker, add ice, and shake vigorously for 5-10 seconds, or until chilled. Strain and pour contents over fresh ice in a Collins glass with a salted rim. Top with soda. Garnish with one maraschino cherry.

Saline Solution: Mix 20 grams of sea salt in 80 ml of water until fully dissolved. Put this solution into a dropper bottle for ease of use.

Winter Spiced Sour

A seasonal Aperitivo Sour with tons of citrus, spice and an herbaceous kick from our Amaro Rosina. And not bad looking either!

Ingredients:

  • 1.5 oz Highside Amaro Rosina

  • .5 oz Lemon Juice

  • .5 oz Winter Spice Syrup (see below)

  • 1 whole egg white (or 1 oz Aquafaba if going Vegan)

  • Garnish: Fresh Rosemary

Mix all ingredients in a cocktail shaker and dry shake vigorously (WITHOUT ICE!) for 30 seconds. Then add ice to shaker and shake again vigorously for 10-15 seconds. Strain contents into a chilled coupe glass and garnish with fresh rosemary. NOTE: You’ll see the foam start to separate after a few seconds and create a beautiful layer at the top of the glass.

Winter Spice Syrup: Bring ½ cup water to boil with ½ cup honey, stirring until fully dissolved. Reduce heat, add 10-12 whole cloves and 1 star anise pod, and let simmer uncovered for 10 minutes. After 10 minutes, let cool, then strain solution to remove solids. Store in the refrigerator.

Italian Tropics

Escape to warmer weather and cooler vibes with our tiki-style Italian Tropics cocktail. Our botanical Amaro Rosina combines with pineapple, fresh lime, and ginger for a perfect summertime sipper.

Ingredients:

  • 2 oz Highside Amaro Rosina

  • 1 oz Pineapple Juice

  • .5 oz Lime Juice

  • 2 dashes Ginger Bitters

  • .25 oz Angostura bitters (for float)

  • Garnish: Pineapple and candied ginger

Mix all ingredients in a cocktail shaker and shake vigorously with ice for 15-20 seconds. Strain contents into a highball glass filled with crushed ice. Float Angostura bitters on top of cocktail using the back of a barspoon, then garnish with pineapple and candied ginger.

 

Rosina Tonic

Forego the traditional G&T and swap in our Amaro Rosina for this incredible refreshing, bubbly, and bitter riff.

Ingredients:

  • 1.5 oz Highside Amaro Rosina

  • .5 oz Fresh Squeezed Orange Juice

  • Top with Tonic Water (we prefer Elderflower Tonic)

  • Garnish: Orange wheel

Build cocktail in your favorite glass filled with ice. Give it a gentle swirl to incorporate and garnish with a fresh or dehydrated orange wheel.
