Peated Single Malt Release + Brisket from Salish Sea Greens

Join us on Saturday, May 9th from 2-5pm, as we release our first FULLY peated American Single Malt Whiskey! A big day for all you peat heads out there and something we've been looking forward to for nearly 6 years. 

This Whiskey of ours started with a 50/50 split mash bill with 50% Washington barley smoked with peat from Shelton, WA (courtesy of Skagit Valley Malting) and 50% imported Scottish barley and Scottish peat. Aged for over 5 years in used Bourbon casks and finished at 100 proof. This whiskey is light straw in color with a rich smoke on the nose and lingering earthy peat finish. We're stoked to finally get this out in the world.

AND this single cask whiskey is available to the general public, so even if you're not part of our Single Malt Society (why wouldn't you be?) you can get access to this limited bottle. However, stock will be limited and we'll open this up to our club members for pre-buy a week early. Plus we've got another special release in the works for our June club release that you won't want to miss.  


And to top it all off, we'll have smoked brisket and mac & cheese plates available for purchase from our friends at Salish Sea Greens. Stay tuned for more details on the event and we hope to see you there!

Bittersweet Alchemy

Join us Wednesday, December 3rd as the Garden Cathedral once again shapeshifts into our laboratory of liquid lore: Bittersweet Alchemy with Highside Distilling and featuring their fearless founder, Matt Glenn, master distiller and certified chiller.

Highside’s been quietly turning out some of the Northwest’s most intriguing spirits from their Bainbridge Island base—everything from alpine-inspired amari to bold, botanical-forward gins and whiskies that taste like a hike through a pine forest followed by a well-earned drink at the summit. Matt will be joining us to pour, pontificate, and probably tell a few stories that smell faintly of juniper and sea air.

Executive Chef Devon Capocelli will be conjuring a four-course tasting menu, each dish paired with both a cocktail or neat pour crafted by Savannah Demy, designed to showcase a different expression from Highside’s portfolio. Think of it as a guided exploration of the Pacific Northwest in liquid form—equal parts curiosity, craftsmanship, and chaos (the good kind).

5:30 PM – Meet & greet with Matt Glenn
6:00 PM – Dinner begins (give or take a sip or two)
$120 per person (21+ only—sorry, this one’s strictly adults behaving moderately well)

As always, seating is communal in true Italian spirit—expect to meet a few new friends over shared sips and bad ideas.

Dietary note: This menu leans indulgent. If you’re vegan, gluten-free, or dairy-free, we love you, but this may not be your round.

PROOF WA Distillery Festival

Hosted by the WA Distillers Guild (a non-profit serving WA state distilleries), PROOF is the event not to miss if you enjoy fine craft spirits! Come taste from a variety of WA distilleries both large and small, from gin to whiskey to amari there is something for everyone to enjoy.

If you find new favorites, distilleries will also be selling bottles to take home, some are special releases and rare bottlings. Additional profits go back to the WA Distillers Guild to help local distilleries through legislative efforts, education, events etc.

Food will be available from the 3.14 PIE food truck, amazing savory and sweet personal pies, perfect for soaking up those samples!

Admission fee includes 12 tasting tickets, DD tickets also available at no extra charge.

Presented by Bainbridge Organic Distillers and Puget Sound Restoration Fund, this divine event features Scottish single malt whiskies and world-class single malt, grain, blended and antique whiskies from Scotland, Ireland, Japan, Canada, Australia, South Africa, Taiwan, the USA, and more.

This event sells out every year – so be sure to purchase your tickets when they go on sale August 5, 2025 at 9:00 am Pacific!

Tickets are $350 per person.

NOTE: Shuttle transportation is not included in the standard ticket price. It is available for $25 per person ONLY at the time of your original ticket purchase. Shuttle seating cannot be added separately after tickets are purchased. Space is limited, so be sure to reserve early to secure your spot!

Our first single cask release for the Single Malt Society is coming up on Saturday, 9/20 from 2-5pm. Club members will be able to pick up their bottle(s) of our exclusive members-only whiskey for the first time! We'll have tastings of the new juice, cocktail specials, light bites, oysters, AND a live DJ set from Pastelle Music to set the vibe.

This event is open to the public (not just club members, so bring your friends!), but only club members will be able to take home bottles of the new whiskey and get to enjoy member perks and discounts. If you plan on joining, we HIGHLY encourage you to sign up in advance. We will reserve a few bottles of the new juice for day-of sign ups, but space will be limited.

Whiskey Release Party - Single Malt Whiskey #008

THIS Saturday, May 24th we'll be hosting a release party for our latest American Single Malt Whiskey, Release #008. Join us from 2-5pm for complementary tastings of the latest batch, $10 cocktail specials, freshly-shucked oysters from Salish Sea Greens, and all-around good vibes! The weather is looking perfect, so come snag a seat on the patio and join in on the fun, 

In case you missed our last newsletter, here's a bit more about the new juice we're debuting. Release 008 is a BIG whiskey - packed with notes of dark chocolate, candied orange, butterscotch and sweet cherries. This release was a combination of three American oak barrels aging our flagship four malt Scotch Ale recipe (#'s 012, 017, and 025). Each of these three casks were new, heavily-charred, American Oak barrels with air-seasoned staves of 24 and 36 months. Two of these casks had been aged for five and half years, with the remaining cask aging for just over 4 years. The high char levels on these barrels gave this release our boldest finish to date, while still drinking remarkably smooth at 100 proof (50% ABV).
