In case you missed our last newsletter, here's a bit more about the new juice we're debuting. Release 008 is a BIG whiskey - packed with notes of dark chocolate, candied orange, butterscotch and sweet cherries. This release was a combination of three American oak barrels aging our flagship four malt Scotch Ale recipe (#'s 012, 017, and 025). Each of these three casks were new, heavily-charred, American Oak barrels with air-seasoned staves of 24 and 36 months. Two of these casks had been aged for five and half years, with the remaining cask aging for just over 4 years. The high char levels on these barrels gave this release our boldest finish to date, while still drinking remarkably smooth at 100 proof (50% ABV).
