Bittersweet Alchemy

Join us Wednesday, December 3rd as the Garden Cathedral once again shapeshifts into our laboratory of liquid lore: Bittersweet Alchemy with Highside Distilling and featuring their fearless founder, Matt Glenn, master distiller and certified chiller.

Highside’s been quietly turning out some of the Northwest’s most intriguing spirits from their Bainbridge Island base—everything from alpine-inspired amari to bold, botanical-forward gins and whiskies that taste like a hike through a pine forest followed by a well-earned drink at the summit. Matt will be joining us to pour, pontificate, and probably tell a few stories that smell faintly of juniper and sea air.

Executive Chef Devon Capocelli will be conjuring a four-course tasting menu, each dish paired with both a cocktail or neat pour crafted by Savannah Demy, designed to showcase a different expression from Highside’s portfolio. Think of it as a guided exploration of the Pacific Northwest in liquid form—equal parts curiosity, craftsmanship, and chaos (the good kind).

5:30 PM – Meet & greet with Matt Glenn
6:00 PM – Dinner begins (give or take a sip or two)
$120 per person (21+ only—sorry, this one’s strictly adults behaving moderately well)

As always, seating is communal in true Italian spirit—expect to meet a few new friends over shared sips and bad ideas.
